Grape varieties & terroir: 40% Chardonnay: Vineyards from the South Hillsides of Epernay and Sezannais – 50% Meunier from the South Hillsides of Epernay - 10% Pinot Noir: Vineyards from Sezannais
Vinification: Manual harvesting with rigorous sorting of the grapes in the vineyards. Partial malolactic fermentation. 20% of chardonnays are aged for 6 months in oak barrels.
Disgorging: On the Fly – Tech Cap Mytik MD3
Aging: 24 to 36 months in cellars
Dosage:Gross 6 g/liter, (Exist also in Demi-Sec 32 g/liter)
