Vinification: Manual harvesting with rigorous sorting of the grapes in the vineyards. White wine - Partial malolactic fermentation.
Aging in vats for 7 months. 35% reserve wine from previous years kept in oak barrels.
Red wine by maceration of Pinot Noir in vats for 8 days.
Aged in oak barrels and blended before bottling.

Aging: 24 months in cellars
Dosage: Brut 5g/liter
Bottles: 75 cl bottle
