Grape varieties & terroir: 60% Chardonnay from 4 plots: Chavot, Pierry, Moussy and Cuis - 30% Meunier from old Chavot-Courcourt vines over 30 years old - 10% Pinot Noir: Vineyard in Barbonne-Fayel
Vinification: Manual harvest with rigorous sorting of the grapes in the vines. Partial malolactic fermentation.
Aging in vats for 7 months. 35% reserve wine from previous years kept in oak barrels
Disgorging: On the fly - Traditional cork stopper
Aging: 36 months in cellars
Dosage: Brut 7 g/liter
Bottling: ½ bottle, 75 cl bottle, Magnum, Jéroboam
