Grape varieties & terroir: 50% Chardonnay from 3 plots at:
Pierry, Moussy and Cuis - Average age of the vines 30 years - 25% Meunier and 25% Pinot Noir from old Chavot-Courcourt vines over 40 years old
Vinification: Manual harvest with rigorous sorting of the grapes
in the vineyards. Malolactic fermentation partially completed.
Aging in vats for 7 months and 25% of wine vinified in oak barrels for 7 months on fine lees
Disgorging: On the Fly – Mytik MD10 Tech Cap
Aging: 5 years and over in cellars
Dosage: Brut 4 g/liter
Bottles: 75 cl bottle
